Nana Sue's Christmas Chocolate Mousse

This recipe is special to me because it was handed down by my father-in-law. His late wife Sue was a great cook and her legacy lives on in this recipe! Christmas was never the same without Sue's famous mousse. Although I am told she was partial to sampling the liqueur as she prepared it!
Ingredients
6 tbsp strong coffee
4 tbsp liqueur
8 oz dark chocolate
1/4 cup castor sugar
1 cup cream
1 tbsp castor sugar
1/2 tsp vanilla
Instructions
- Pour coffee and liqueur into double boiler, add chocolate and melt together.
- Stir until well blended. Add sugar and continue stirring over heat until thick and glossy.
- Leave to cool.
- Whip cream until very thick. Fold in sugar and vanilla with spatula.
- Slowly and thoroughly blend chocolate mixture into cream.
- Refrigerate overnight.
