Nana Sue's Christmas Chocolate Mousse

This recipe is special to me because it was handed down by my father-in-law. His late wife Sue was a great cook and her legacy lives on in this recipe! Christmas was never the same without Sue's famous mousse. Although I am told she was partial to sampling the liqueur as she prepared it!


6 tbsp strong coffee
4 tbsp liqueur
8 oz dark chocolate
1/4 cup castor sugar
1 cup cream
1 tbsp castor sugar
1/2 tsp vanilla


  1. Pour coffee and liqueur into double boiler, add chocolate and melt together.
  2. Stir until well blended. Add sugar and continue stirring over heat until thick and glossy. 
  3. Leave to cool. 
  4. Whip cream until very thick. Fold in sugar and vanilla with spatula. 
  5. Slowly and thoroughly blend chocolate mixture into cream.  
  6. Refrigerate overnight.
