Corina's Easy Summer Quiche

My dear friend Corina gave me this recipe after she made us this quiche at her home one day. At the time, we were both leading busy lives farming and raising young children. This is such an easy meal you can whip up in minutes with whatever you have in your fridge.


3 eggs
1 ¼ cup milk
2 tbsp melted butter
Salt & pepper
½ cup self-raising flour
1 cup chopped bacon or salmon
1 cup grated cheese
1 cup grated carrot
1 large onion – finely chopped
Handful of chopped spinach
Tomato slices for the top


  1. Mix first 4 ingredients together. Add remaining ingredients and stir gently until combined.
  2. Pour into greased quiche dish.
  3. Bake at 200˚C for about 30 minutes or until golden on top.
